Pumpkin Cake Mix Cupcakes

Divide the batter among the prepared muffin tins lined with paper liners and bake at 350 degrees until a toothpick inserted into the center of a cupcake comes out.

Preheat your oven to 350 degrees f. Allow to cool and top with cinnamon buttercream icing recipe below. Place cupcake liners in 24 muffin cups or grease muffin cups. Spoon batter into muffin tins and bake for approximately 15 minutes or until a toothpick inserted into cupcake comes out clean.

In large bowl beat cake mix pumpkin water oil eggs and pumpkin pie spice with electric mixer on low speed 30 seconds then on medium speed 2 minutes scraping bowl occasionally. Cool in pans on wire racks for 10 minutes. Add vanilla and cinnamon and mix well. Bake for 18 to 23 minutes or until wooden pick inserted in center comes out clean.

Pour the pumpkin cupcake batter into liners in muffin tins and bake for 17 20 minutes. Pour batter into muffin cups evenly about 3 4 full. Blend cake mix pumpkin eggs oil and water in large mixer bowl until moistened. Prepare the cake mix as directed but with the following change.

Stir spice cake mix and pumpkin together until a thick batter emerges and the spice cake mix is completely mixed into the pumpkin. Pour the batter into a greased cake pan and bake until a toothpick comes out mostly clean. Remove to wire racks to cool completely. Increase speed to medium and beat for an additional 2 minutes.

To make these pumpkin spice cupcakes combine the cake mix plus ingredients on back minus the water pumpkin pie spice and pumpkin puree. Pour batter into prepared muffin cups filling 3 4 full. Beat on medium speed for 2 minutes. Divide batter evenly among muffin cups about two thirds full.

Add the pumpkin pie spice and substitute the can of pumpkin puree for the water called for in the package directions.
